Have Your Own Sushi Party
Peanut Butter Sushi Appetizer

Prep Time: 15 Minutes for 40 Rolls

1. Slice strawberries and bananas
2. Trim crust off 10 slices of bread
3. Spread peanut butter on bread
4. Place a row of strawberry slices next to
5. a row of banana slices on one end of the bread
6. Starting with fruit side, roll into a tube, pressing gently, at first this may seem difficult but after a few tries your sushi rolls will be beautiful
7. Slice roll into 4 equal sections, we recommend using a serrated knife

Cucumber, seeded, cut into thin strips
Avocado, cut into thin strips
6 ounces imitation crab meat, halved length-wise
1/2 cup sesame seeds, toasted
sushi rice (see recipe below)
3 sheets nori, halved length-wise
1. On a sushi rolling mat covered with plastic wrap, place a half sheet of nori, shiny side down.
2. Wet your hands to prevent the rice from sticking to your fingers and place 1/3 to 1/2 cup sushi rice over nori. Delicately spread the rice on the nori leaving a 1 inch at the farthest end uncovered. Do not squish or smash rice to the nori.
Evenly sprinkle sesame seeds over rice.
3. Flip nori over so rice side is facing down. Place one cucumber strip, avocado strip and fish in center of nori.
4. Using the mat to suport the nori and rice, roll it up.
5. Once rolled, cover with the mat, apply pressure with mat to tighten the sushi roll.
6. Remove the mat, and have an adult cut roll into four large pieces with a sharp, wet knife.
Sushi Rice
1 ½ cups rice
6 tablespoon seasoned rice vinegar
1 ½ teaspoons salt
1. Use sushi rice which is white, short-grain Japanese rice or medium-grain California rice. Add 1 ½ cups rice with the 1 ¾ cups +1 tablespoon water in a medium-sized sauce pan.
2. Over medium heat, cook rice for 10 to 15 minutes uncovered and another 10 to 15 minutes covered.
3. Remove rice from heat and let stand covered for 10 minutes.
4. Combine the vinegar and salt in a large glass or ceramic bowl.
5. Fold dressing in large tossing motions. Do not mush rice.
6. Store sushi rice in at cool room temperature - never in fridge.
Dessert Sushi

Prep Time: 1 hour
1/4 cup butter, 4 cups mini marshmallows, 6 cups crisped rice cereal, 20 to 25 gummy worms, 1 to 2 boxes fruit leather
1. Melt butter in a sauce pan over medium heat, add marshmallows and stir until smooth
2. Remove from heat and stir in cereal until evenly coated
3. Turn the baking sheet so that the shorter ends are at the top and bottom
4. Press the marshmallow mixture onto the sheet, distributing it evenly, we recommend using a non-stick spray like Pam on your hands while doing this
5. Starting at one side an inch up from the lower edge, place gummy worms atop the mixture end to end in a horizontal line
6. Gently roll the lower edge of the marshmallow mixture over the gummy worms
7. Stop and cut the log away from the rest of the mixture, use a serrated knife for this and all other cutting
8. Use the same method to form 4 more logs
9. Slice each log into 1-inch-thick "sushi" rolls
10. Wrap rolls individually with a strip of fruit leather
11. For best results while wrapping, place "rice roll" at the top corner of the fruit leather, align knife so that it brushes the inner side of the rice roll and cut down the fruit leather piece, this ensures the fruit leather piece fits well
12. If at first the fruit leather does not seem long enough to encircle the rice roll, gently stretch it until it wraps completely around

Party Planner:
- Have kids help prepare the appetizer and dessert sushi.
- Pop in a favorite fish, penguin, or pirate movie to entertain the children, while you and your friends roll the sushi entrée.
- Decorate a shoebox or other large cardboard box to look like a treasure chest. Fill with dessert sushi and hide.
- After the movie have kids go on a hunt for their treasure!
