Sweet Potato French Fries fries

2 lbs. sweet potatoes, peeled
2-4 Tablespoons vegetable oil
2 teaspoons cinnamon
2 teaspoons brown sugar

  1. Lightly oil (or spray with oil) two non-stick cookie sheets and set aside.
  2. Cut the peeled sweet potatoes into "french fries" or pieces 1/2-inch wide and 3-4-inches long.
  3. Transfer the cut sweet potato fries to the prepared cookie sheets, dividing them evenly between the two sheets, and spread them to a single layer.
  4. For each cookie sheet: drizzle the sweet potatoes with 1-2 T. vegetable oil, then sprinkle with cinnamon and brown sugar until covered as desired. Bake at 375 degrees for 20 minutes.
  5. Remove the cookie sheets from the oven, stir the sweet potatoes, and spread to a single layer again. Switch the placement of the cookie sheets on the racks of the oven and bake the sweet potatoes an additional 20-25 minutes, or until lightly browned and crisp. Transfer to a large platter for service.

Serve these delightfully easy salmon burgers on whole-wheat buns with tartar sauce or a different favorite.

24-28 ounces boneless, skinless canned Wild Alaskan Pink Salmon
1-¼ cups bread crumbs
¼ cup mayonnaise
1 egg, beaten
1 tablespoon Worcestershire sauce
1-tablespoon vegetable oil

  1. In a large bowl, mix together all the ingredients, except the oil.
  2. Form the mixture into 6 small patties.
  3. In a large nonstick skillet, heat the oil over medium heat. Sauté the patties for 2 to 3 minutes on each side until they are lightly browned.
  4. Remove them from the heat and serve them immediately.

Strawberry Banana Frosties smoothie

2 sliced bananas
15 sliced strawberries
1 cup milk

1 tsp honey

10 ice cubes

1. Combine fruit and milk in a blender until smoothe.
2. Add honey into blender, blend on medium 30 seconds.
3. Gradually add ice cubes, 2 at a time until blended (blend on high).
